Pre-processing the ingredients

When you buy pork ribs, mix salt with water, add a spoonful of flour, and soak for about 10 minutes. Then rinse thoroughly with cold water to remove any impurities and blood. Next, use a knife to chop the ribs into bite-sized pieces. If you don't want to chop the ribs yourself, you can buy pre-chopped ribs at the supermarket or choose the ribs and ask the seller to chop them for you.

Peel and clean the shallots and garlic, then finely chop them.

Wash and finely chop the scallions and chili peppers.

Marinate the ribs with 2 tablespoons of fish sauce, 1 teaspoon of seasoning powder, 1 tablespoon of sugar, 1 tablespoon of soy sauce, and 1 tablespoon of vinegar. Remember to mix the ribs well with the seasoning and marinate for about 30 minutes.

Heat a pan on the stove, add cooking oil, and when the oil is hot, sauté the chopped onions and garlic until fragrant. Then add the pork ribs and stir well. When the ribs are cooked and browned, season with spices and ground pepper, stir well, add coconut milk (from one fresh coconut), and reduce the heat to low. Simmer the ribs for 25-30 minutes until tender.

When the coconut milk has reduced and thickened, and the ribs have turned a reddish-brown color, turn off the heat.

Transfer the ribs to a plate, garnish with chopped scallions and chili peppers. You can also sprinkle with ground pepper.

Braised pork ribs in coconut milk, prepared in the restaurant style, are tender and fatty, with the natural sweetness of the ribs blending perfectly with the coconut milk. This dish is best enjoyed with hot rice. You can also prepare a plate of cucumber, tomatoes, or boiled vegetables for an even tastier meal.

To make delicious, restaurant-quality braised pork ribs in coconut milk, choosing the right ribs is crucial. You should select ribs with a good balance of lean meat and fat, and a little cartilage will make them even tastier.
