Of all the parts of a pig, ribs are the easiest to please everyone in the family. From children to adults, almost everyone considers ribs a favorite dish.
Pork ribs braised in coconut milk is one of the appealing ways to prepare this dish, perfect for family meals. Busy housewives can confidently make this dish; it doesn't take much time, doesn't require complicated preparation, but the result is still excellent.
How to make braised pork ribs with coconut milk
Ingredients: 400g coconut water (or the water from one coconut), 500g pork ribs, shallots, garlic, chili peppers; sugar, fish sauce, oyster sauce, seasoning powder, cooking oil, pepper, coconut milk.
Wash the pork ribs thoroughly and cut them into bite-sized pieces. Peel and finely chop the shallots and garlic, and cut the chili peppers into small pieces.
Marinate the ribs with chopped onion and garlic, 1 teaspoon oyster sauce, 1 teaspoon fish sauce, 1 teaspoon sugar, 1 teaspoon seasoning powder, and 1 teaspoon ground pepper to taste (add chopped chili if you like spicy food). Wrap the ribs tightly with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to infuse.
Heat a pan over low heat, add 1 tablespoon of cooking oil and 2 tablespoons of sugar, stirring constantly. When the sugar turns a golden brown, add the pork ribs and stir-fry until browned. Then add enough coconut milk to cover the ribs, 1 tablespoon of coconut cream, and bring to a boil. Reduce the heat to low and simmer until the ribs are tender and the sauce thickens (adjust seasoning to taste during simmering). Turn off the heat.

Note that when the water is almost gone, you should stir continuously to prevent burning.
Braised pork ribs with soy sauce
Ingredients: 500g pork ribs, 1 ginger root, chili peppers, garlic, scallions, fermented soybean paste, oyster sauce, sesame oil, seasoning powder, sugar.
Wash the pork ribs, blanch them briefly, then remove them, rinse with cold water, and drain. Wash the ginger, peel it, and cut it into strips. Finely chop the garlic and chili peppers.
Place the ribs in a bowl and marinate with 1 tablespoon oyster sauce, 1/2 teaspoon sesame oil, 2 tablespoons fermented soybean paste, 1/2 teaspoon seasoning powder, 1 tablespoon sugar, a little minced garlic and chili, mix well and marinate for about 30 minutes, then steam them, adding a little ginger.
Steam for about 30 minutes, then open the lid, season to taste, stir well, then steam for another 10 minutes. Turn off the heat and sprinkle with pepper and green onions. Serve hot with white rice.
Sweet and savory pineapple-braised pork ribs
Ingredients: 500g pork ribs, 100g pineapple, 50g bell peppers, 1 tablespoon sugar, 1 tablespoon vinegar, 1 tablespoon fish sauce, 1 tablespoon chili sauce, 1/2 teaspoon pepper; shallots, garlic, chili peppers, green onions.
Wash the ribs and drain. Peel the pineapple, remove the eyes, and cut into pieces. Remove the seeds from the bell peppers and cut into squares. Finely chop the shallots and garlic; slice the chili peppers, and finely chop the scallions.
Heat a pan on the stove, add oil, and sear the ribs until browned. Remove and drain excess oil. In a bowl, combine 1 tablespoon of sugar, 1 tablespoon of vinegar, 1 tablespoon of fish sauce, 1 tablespoon of chili sauce, and 1/2 teaspoon of pepper. Stir well.
Remove excess oil from the pan, sauté minced onion and garlic until fragrant, add the ribs and stir-fry briefly. Then add the prepared sauce and stir-fry for 2-3 minutes until absorbed. Finally, add the bell peppers and pineapple and stir-fry until the pineapple is cooked through. Adjust seasoning to taste. Turn off the heat, transfer the braised ribs with pineapple to a plate, garnish with chopped scallions and chili peppers, and serve with hot rice for a perfect meal.
