- 4 kg of beef shank
- 1.5g packet of five-spice powder
- Beef stew seasoning packet (10g dry powder and 20g liquid)
- Canned meat seasoning packet: 5g
- 1 teaspoon of annatto powder
- 1 bowl of molasses
- 1 ginger root, 3 chili peppers, 3 cloves of garlic, 3 shallots, 4 stalks of lemongrass
- Seasoning: 2 teaspoons MSG, 2 teaspoons seasoning powder, 1 teaspoon pepper, half a bowl of fish sauce, 1 teaspoon cooking oil
- A few star anise flowers and some cinnamon sticks.

Making
- Wash the beef thoroughly and drain. Cut the meat into square blocks about 200-300g thick.
- Crush and tear the ginger; finely chop the garlic and shallots; crush and cut the lemongrass into sections; and slice the chili peppers.
- Place the meat in a pot, mix well with all the spices listed above, then use your hands to thoroughly rub the spices onto the outside of the meat. Marinate the meat for about 45 minutes to 1 hour. (The marinated meat will release a little liquid, so you can add a small bowl of water, as you don't need too much water since it will be cooked until the liquid evaporates).
- Place the pot on the stove. First, set the heat to high or nearly high and simmer until the water boils and the beef turns medium rare. Then, flip the beef slices so that the outside is no longer red. Once all sides of the beef are no longer raw, reduce the heat to low. Simmer for about 1-2 hours until the beef is tender.
- Remove the meat from the pan and place it on a plate, slicing it thinly or tearing it into pieces like beef jerky. The meat can be refrigerated and eaten within a week. It's delicious as a snack or served with rice.
